  • 1 cup turkey bacon, chopped
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped turkey bacon and cook until crispy.
  3. Add onion and garlic; sauté until the onion is translucent.
  4. Stir in butternut squash, vegetable broth, cumin, salt, and black pepper.
  5. Bring to a boil, then reduce heat and let simmer for about 20 minutes, or until the squash is tender.
  6. Use an immersion blender to blend the soup until smooth. If using, stir in heavy cream before serving.

Notes

  • For a spicier soup, add a pinch of cayenne pepper.
  • This soup can be easily made vegan by omitting the turkey bacon and using coconut cream instead of heavy cream.
