- 4 ears sweet corn
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 cup heavy cream
- 1/2 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt to taste
- Pepper to taste
- Grill the corn until charred, then cut kernels off the cob.
