  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 cup heavy cream
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Grill the corn until charred, then cut kernels off the cob.
  2. In a large pot, heat olive oil over medium heat and sauté onion and garlic until softened.
  3. Add vegetable broth, corn, chili powder, cumin, salt, and pepper. Bring to a boil.
  4. Reduce heat and stir in heavy cream. Simmer for 10 minutes.
  5. Remove from heat and stir in cotija cheese, cilantro, and lime juice.
