Easy Summer Meals Ideas : Crock Pot Birria Tacos

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 3 guajillo peppers
  • 2 ancho peppers
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 2 cups beef broth
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, sliced

Instructions

  1. Heat olive oil in a skillet over medium heat. Sear the beef chuck roast on all sides.
  2. Remove the roast and set aside. In the same skillet, add chopped onion and minced garlic, sauté until fragrant.
  3. Add the toasted guajillo and ancho peppers, cumin, oregano, and salt to the skillet.
  4. Pour in the beef broth and bring to a simmer.
  5. Transfer the mixture to the Crock Pot and place the seared roast on top.
  6. Cover and cook on low for 8 hours or on high for 4 hours.
  7. Once cooked, shred the meat inside the Crock Pot.
  8. Serve in warm corn tortillas topped with cilantro and lime juice.

Notes

  • For best results, use a quality cut of beef.
  • Feel free to adjust spice levels by adding more peppers.
