  • 2 pounds chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 dried guajillo peppers, stems removed
  • 1 chipotle pepper in adobo sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon oregano
  • 4 cups beef broth
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large bowl, season the chuck roast with salt, pepper, garlic, and onion. Place the roast in the Crock Pot.
  2. In a blender, combine the tomatoes, guajillo peppers, chipotle pepper, cumin, and oregano. Blend until smooth, then pour over the meat in the Crock Pot.
  3. Add the beef broth to the Crock Pot and cook on low for 8 hours or until the meat is tender.
  4. Once cooked, shred the meat with two forks and return to the sauce.
  5. To serve, warm the corn tortillas and fill them with the braised meat. Top with cilantro and serve with lime wedges.
