- 2 pounds chuck roast
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 tomatoes, diced
- 3 dried guajillo peppers, stems removed
- 1 chipotle pepper in adobo sauce
- 1 tablespoon ground cumin
- 1 tablespoon oregano
- 4 cups beef broth
- 12 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- In a large bowl, season the chuck roast with salt, pepper, garlic, and onion. Place the roast in the Crock Pot.
- In a blender, combine the tomatoes, guajillo peppers, chipotle pepper, cumin, and oregano. Blend until smooth, then pour over the meat in the Crock Pot.
- Add the beef broth to the Crock Pot and cook on low for 8 hours or until the meat is tender.
- Once cooked, shred the meat with two forks and return to the sauce.
- To serve, warm the corn tortillas and fill them with the braised meat. Top with cilantro and serve with lime wedges.
