Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add in the pumpkin puree, eggs, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Using a cookie scoop, drop dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
