  • 8 large eggs
  • 4 English muffins
  • 4 slices cheddar cheese
  • Salt to taste
  • Ground pepper to taste

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy.
  2. In a bowl, whisk the eggs with salt and pepper. Scramble them in the same skillet until fully cooked.
  3. Toast the English muffins until golden brown.
  4. Assemble the sandwiches by placing a slice of cheese on the bottom half of each muffin, followed by bacon, scrambled eggs, and the top half of the muffin.
  5. Wrap each sandwich in foil and freeze.
  6. To reheat, unwrap and microwave for 1-2 minutes.
