Greek Yogurt Apple Cinnamon Muffins

Delicious Greek Yogurt Apple Cinnamon Muffins that are easy to make and guilt-free.

  • 1 cup Greek yogurt
  • 1 cup diced apples
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine Greek yogurt, honey (or maple syrup), eggs, applesauce, and vanilla extract.
  3. In another bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the diced apples.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
