- 1 cup Greek yogurt
- 1 cup diced apples
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine Greek yogurt, honey (or maple syrup), eggs, applesauce, and vanilla extract.
- In another bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the diced apples.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
