Instructions

  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking soda, cinnamon, and salt; gradually blend this into the creamed mixture.
  5. Stir in the oats.
  6. Drop by rounded tablespoons onto ungreased baking sheets.
  7. Bake for 10-12 minutes or until golden brown. Let cool on wire racks.
  8. For the filling, beat together the powdered sugar, shortening, and vanilla until smooth; sandwich between two cookies.
