  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup whole milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/4 cup brown sugar
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix together flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In a separate bowl, whisk together milk, vegetable oil, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In another small bowl, combine brown sugar and melted butter for the cinnamon swirl.
  6. Fill each muffin cup halfway with batter, then add a spoonful of the cinnamon swirl mixture in the center, followed by more batter on top.
  7. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For a cream cheese glaze, mix together cream cheese, powdered sugar, and milk until smooth.
  • These muffins are best enjoyed fresh, but can be stored for a couple of days.
