  • 2 pounds baby potatoes
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sliced jalapenos
  • 1/4 cup sour cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Boil the baby potatoes in salted water until tender, about 15-20 minutes.
  3. Drain the potatoes and transfer them to a baking sheet.
  4. Smash the potatoes gently with a fork or potato masher.
  5. Drizzle olive oil over the smashed potatoes and season with garlic powder, onion powder, salt, and pepper.
  6. Bake in the oven for 25-30 minutes until crispy and golden.
  7. In a bowl, mix cream cheese, cheddar cheese, sliced jalapenos, and sour cream.
  8. Remove the potatoes from the oven and top with the cream cheese mixture.
  9. Return to the oven for an additional 5-10 minutes to melt the cheese.
  10. Serve hot, garnished with extra jalapenos if desired.

Notes

  • For a spicier version, use fresh jalapenos instead of pickled ones.
  • These potatoes are best served immediately, but they can be stored in the refrigerator for up to 3 days.
