Ingredients

  • 2 medium zucchini, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup turkey bacon, cooked and chopped
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons olive oil, for frying

Instructions

  1. Grate zucchini and place in a bowl. Sprinkle with salt and let sit for 10 minutes.
  2. After 10 minutes, squeeze out excess moisture from the zucchini.
  3. In a large bowl, combine the grated zucchini, pepper, cooked turkey bacon, eggs, almond flour, parmesan cheese, and parsley.
  4. Heat olive oil in a skillet over medium heat.
  5. Scoop batter into the skillet and flatten slightly. Cook until golden brown on both sides, about 3-4 minutes per side.
  6. Transfer to a paper towel-lined plate to drain excess oil.

Notes

  • For a crispier texture, add more almond flour.
  • These fritters can be served warm or at room temperature.
