- 2 medium zucchini, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup turkey bacon, cooked and chopped
- 2 large eggs
- 1/4 cup almond flour
- 1/4 cup grated parmesan cheese
- 1 tablespoon fresh parsley, chopped
- 2 tablespoons olive oil, for frying
- Grate zucchini and place in a bowl. Sprinkle with salt and let sit for 10 minutes.
- After 10 minutes, squeeze out excess moisture from the zucchini.
- In a large bowl, combine the grated zucchini, pepper, cooked turkey bacon, eggs, almond flour, parmesan cheese, and parsley.
- Heat olive oil in a skillet over medium heat.
- Scoop batter into the skillet and flatten slightly. Cook until golden brown on both sides, about 3-4 minutes per side.
- Transfer to a paper towel-lined plate to drain excess oil.
Notes
- For a crispier texture, add more almond flour.
- These fritters can be served warm or at room temperature.
