  • 4 medium zucchinis
  • 2 cups diced chicken breast
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise and scoop out the seeds.
  3. In a bowl, combine the diced chicken, cherry tomatoes, Italian seasoning, salt, and pepper.
  4. Stuff the zucchini boats with the chicken mixture and drizzle with olive oil.
  5. Place in a baking dish and cover with mozzarella cheese.
