Mexican Street Corn Pasta Salad

A refreshing and vibrant pasta salad inspired by Mexican street corn, perfect for summer gatherings.

Ingredients

  • 8 ounces elbow macaroni
  • 1 cup fresh corn kernels
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 2 tablespoons mayonnaise
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the macaroni according to package instructions. Drain and set aside to cool.
  2. In a large bowl, combine the corn, feta, cilantro, lime juice, mayonnaise, chili powder, salt, and pepper.
  3. Add the cooled macaroni to the bowl and mix until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a spicy kick, add diced jalapeños.
  • Best served chilled, but can also be enjoyed at room temperature.
