Mexican Street Corn Pasta Salad

A delicious and refreshing Mexican Street Corn Pasta Salad featuring turkey bacon.

Ingredients

  • 2 cups pasta
  • 1 can corn, drained
  • 4 slices turkey bacon, cooked and crumbled
  • 1 red bell pepper, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • salt to taste

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In a large bowl, combine the cooked pasta, corn, turkey bacon, red bell pepper, and cilantro.
  3. In a small bowl, mix together the mayonnaise, lime juice, chili powder, and salt.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
