- 2 pounds chicken thighs
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 12 ounces pappardelle pasta
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- Heat olive oil in a Dutch oven over medium heat. Add chicken thighs and brown on both sides. Remove and set aside.
- Add onion and garlic to the pot; sauté until onion is translucent.
- Return chicken to pot; add chicken broth and heavy cream. Simmer for 30 minutes or until chicken is tender.
- Meanwhile, cook pappardelle according to package instructions. Drain and set aside.
- Shred chicken and return to sauce. Season with salt and pepper.
- Serve the creamy chicken sauce over pappardelle and garnish with parsley.
Notes
- For additional richness, you can add Parmesan cheese to the sauce.
- Serve with a green salad for a complete meal.
