Peach Streusel Muffins

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, chopped
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour (for streusel topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together melted butter, eggs, sour cream, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the chopped peaches.
  5. In a separate bowl, mix brown sugar, oats, and flour to make the streusel topping.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full, and sprinkle the streusel topping on each muffin.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For extra peach flavor, add a bit of peach extract to the batter.
  • These muffins freeze well, so feel free to make a double batch!
