  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1 cup brewed coffee, cooled
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a mixing bowl, combine all the dry ingredients.
  3. In another bowl, beat the butter and sugars until creamy.
  4. Add eggs, vanilla extract, and peppermint extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the brewed coffee.
  6. Fold in the chocolate chips.
  7. Pour the batter into the lined cupcake tins, filling them about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Allow cupcakes to cool before frosting.

Notes

  • For an extra festive touch, add crushed candy canes on top of the frosting.
