  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the pumpkin puree, sugar, brown sugar, and vegetable oil.
  3. Add the eggs and vanilla extract, mixing until combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fill muffin cups with the batter halfway and add a dollop of cream cheese on top before adding more batter to cover.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.
