  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, and vegetable oil until smooth.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill each cupcake liner about 2/3 full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool completely before frosting.

Notes

  • For a cream cheese frosting, beat together 8 oz cream cheese, 1/2 cup butter, and 4 cups powdered sugar.
