  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda

  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the pumpkin puree, sugar, brown sugar, and vegetable oil until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fill muffin cups about 2/3 full with the batter.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.
