  • 1 cup pumpkin puree
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup chocolate chips (optional)

Instructions

  1. In a large bowl, mix together the pumpkin puree, almond butter, and honey or maple syrup until well combined.
  2. Add in the rolled oats, protein powder, cinnamon, and nutmeg. Mix until fully incorporated.
  3. If desired, fold in the chocolate chips.
  4. Form the mixture into small balls and place them on a parchment-lined baking sheet.
  5. Refrigerate for at least 30 minutes to set before serving.
