- 1 cup pumpkin puree
- 1/2 cup almond flour
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine pumpkin puree, almond flour, rolled oats, honey or maple syrup, and melted coconut oil.
- Add baking powder, cinnamon, nutmeg, and salt to the mix, and stir until well combined.
- Fold in dark chocolate chips.
- Drop spoonfuls of the dough onto the prepared baking sheet.
- Bake for 12-15 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
