Pumpkin Superfood Cookies

  • 1 cup pumpkin puree
  • 1/2 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine pumpkin puree, almond flour, rolled oats, honey or maple syrup, and melted coconut oil.
  3. Add baking powder, cinnamon, nutmeg, and salt to the mix, and stir until well combined.
  4. Fold in dark chocolate chips.
  5. Drop spoonfuls of the dough onto the prepared baking sheet.
  6. Bake for 12-15 minutes or until the edges are golden.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For added nutrition, feel free to mix in nuts or seeds.
  • These cookies can also be made vegan by using a flax egg instead of honey.
