  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 cup granulated sugar (for rolling)
  • 1 tsp ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together pumpkin puree, granulated sugar, brown sugar, and butter until smooth.
  3. Add in eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In a small bowl, combine the 1/4 cup sugar and 1 tsp cinnamon for rolling.
  7. Form the dough into balls and roll in the cinnamon-sugar mixture.
  8. Place on a baking sheet lined with parchment paper and bake for 10-12 minutes, until lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For extra flavor, you can add chocolate chips or nuts.
  • Let the cookies cool completely before storing them in an airtight container.
