- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/4 cup granulated sugar (for rolling)
- 1 tsp ground cinnamon (for rolling)
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together pumpkin puree, granulated sugar, brown sugar, and butter until smooth.
- Add in eggs, one at a time, mixing well after each addition.
- In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, combine the 1/4 cup sugar and 1 tsp cinnamon for rolling.
- Form the dough into balls and roll in the cinnamon-sugar mixture.
- Place on a baking sheet lined with parchment paper and bake for 10-12 minutes, until lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
