Ingredients

  • 1 cup whole wheat flour
  • 1/4 cup creamy peanut butter
  • 1/4 cup jelly or jam of choice
  • 1/4 cup milk (or non-dairy alternative)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 tablespoon coconut oil (melted)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the whole wheat flour, salt, and baking powder.
  3. In another bowl, combine the peanut butter, jelly, milk, honey, and coconut oil.
  4. Combine the wet and dry ingredients until a dough forms.
  5. Roll the dough out and cut into squares.
  6. Fill each square with a tablespoon of peanut butter and jelly mixture, fold and seal edges.
  7. Place on a baking sheet and bake for 12-15 minutes until golden.
  8. Let cool before packing in lunch boxes.

Notes

  • These pockets can be made ahead of time and stored in the fridge for up to a week.
  • Feel free to substitute any nut butter or fruit spreads to suit your taste.
