1 cup graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
2 (8 ounce) packages cream cheese, softened
1 cup pumpkin puree
3/4 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press mixture into the bottom of a greased 9×9 inch baking dish.
In another bowl, beat together cream cheese and brown sugar until smooth. Add pumpkin puree, eggs, vanilla extract, pumpkin pie spice, and salt. Mix until well combined.
Pour pumpkin mixture over the crust and spread evenly.
Bake for 30-35 minutes, or until set. Let cool before slicing into bars.
Notes
For added flavor, top with whipped cream and a sprinkle of cinnamon.
These bars can be served chilled or at room temperature.
