Roasted Pumpkin Soup

A delicious and comforting roasted pumpkin soup recipe made with turkey bacon.

Ingredients

  • 2 cups pumpkin puree
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and crumble.
  2. Add onions to the pot and sauté until translucent, about 5 minutes.
  3. Add garlic and cook until fragrant, about 1 minute.
  4. Add pumpkin puree, vegetable broth, cinnamon, nutmeg, salt, and pepper. Bring to a simmer.
  5. Cook for 20 minutes. Use an immersion blender to puree until smooth.
  6. Serve hot, topped with crumbled turkey bacon.

Notes

  • For a creamier soup, add a splash of heavy cream before serving.
