Silky Coffee Cheesecake with Chocolate Ganache

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup brewed coffee, cooled
  • 1 cup heavy cream
  • 8 ounces semisweet chocolate, chopped

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter; press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add vanilla extract, then mix in eggs one at a time.
  5. Stir in the cooled coffee until well combined.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes, or until set. Allow to cool, then refrigerate for at least 4 hours.
  8. For the ganache, heat heavy cream in a saucepan until just simmering, then pour over chopped chocolate and let sit for 5 minutes before stirring until smooth.
  9. Pour ganache over the chilled cheesecake and spread evenly. Chill until set.
  10. Slice and serve garnished with coffee beans if desired.

Notes

  • For added flavor, consider adding a tablespoon of espresso powder to the cheesecake mixture.
  • Make sure to let the cheesecake cool completely before adding the ganache to avoid melting it.
