Simple Chicken Pot Pie Recipe

  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas and carrots
  • 1/2 cup chopped onion
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon celery seed
  • 2 refrigerated pie crusts

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a saucepan, melt the butter over medium heat. Add the onion and cook until it’s tender.
  3. Stir in the flour, salt, pepper, and celery seed until well blended.
  4. Gradually stir in the chicken broth and milk. Cook until bubbly and thickened.
  5. Add the chicken and peas and carrots to the mixture.
  6. Pour the chicken mixture into a pie crust. Top with the second crust, seal the edges, and cut slits in the top.
  7. Bake for 30 to 35 minutes until golden brown.
