Skillet Lemon Parmesan Chicken Zucchini and Squash

Ingredients

  • 2 chicken breasts
  • 1 zucchini
  • 1 yellow squash
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 lemon (juiced)
  • 2 cloves garlic (minced)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden and cooked through, about 6-7 minutes on each side.
  3. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and sauté for about 30 seconds.
  5. Add zucchini and yellow squash to the skillet, cooking until tender.
  6. Return chicken to the skillet, add lemon juice, and sprinkle parmesan cheese over the top.
  7. Cook for an additional 2 minutes until the cheese is melted.
