Slow Cooker Garlic Butter Chicken and Veggies

A simple and delicious recipe for slow cooker garlic butter chicken and vegetables that makes for great comfort food.

  • 4 chicken thighs
  • 1 pound baby potatoes
  • 2 cups broccoli florets
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. Add the baby potatoes and broccoli florets on top of the chicken.
  3. In a small bowl, mix together the minced garlic, butter, salt, pepper, and Italian seasoning. Pour this mixture over the chicken and vegetables.
  4. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken and mix it with the veggies and sauce before serving.
