- 1 pound boneless chicken thighs
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon cornstarch
- 2 tablespoons water
- In a slow cooker, combine soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
- Add the chicken thighs and ensure they are coated with the sauce.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, remove the chicken and shred it.
