Slow Cooker Teriyaki Chicken

  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. In a slow cooker, combine soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
  2. Add the chicken thighs and ensure they are coated with the sauce.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, remove the chicken and shred it.
  5. Mix cornstarch and water in a small bowl until smooth, then stir it into the slow cooker.
  6. Cook on high for an additional 30 minutes or until the sauce thickens.
  7. Return the shredded chicken to the slow cooker and mix well.
  8. Serve over rice or noodles.

Notes

  • For a little heat, add some red pepper flakes to the sauce.
