  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/4 cup apple cider
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup crystallized ginger, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
  3. In another bowl, cream together the butter, brown sugar, and granulated sugar.
  4. Add apple cider, egg, and vanilla to the butter mixture, mixing until combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the crystallized ginger.
  7. Drop tablespoon-sized balls of dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a stronger ginger flavor, add more crystallized ginger.
  • These cookies are best enjoyed fresh but can be stored for later.
