- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1/4 cup apple cider
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup crystallized ginger, chopped
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
- In another bowl, cream together the butter, brown sugar, and granulated sugar.
- Add apple cider, egg, and vanilla to the butter mixture, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the crystallized ginger.
- Drop tablespoon-sized balls of dough onto ungreased baking sheets.
- Bake for 10-12 minutes or until edges are lightly golden.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
