- 1 cup cottage cheese
- 1 cup diced strawberries
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/4 cup honey
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix together the cottage cheese, honey, and eggs until smooth.
- In another bowl, combine the whole wheat flour, all-purpose flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and fold in the diced strawberries.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
