Strawberry Cottage Cheese Muffins

Delicious and nutritious muffins made with cottage cheese and fresh strawberries.

  • 1 cup cottage cheese
  • 1 cup diced strawberries
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the cottage cheese, honey, and eggs until smooth.
  3. In another bowl, combine the whole wheat flour, all-purpose flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture and fold in the diced strawberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

  • Feel free to substitute other fruits if strawberries are not available.
