Strawberry Earthquake Cake

A delightful cake bursting with strawberry flavor and a rich, gooey center.

Ingredients

  • 1 box chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • 2 cups fresh strawberries, chopped
  • 1 cup shredded coconut
  • 1 cup walnuts, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cake mix, water, vegetable oil, and eggs. Mix until well combined.
  3. Pour half of the mixture into a greased baking pan.
  4. In another bowl, blend cream cheese and powdered sugar until smooth. Fold in chopped strawberries.
  5. Spoon the strawberry mixture over the cake batter in the baking pan.
  6. Top with shredded coconut and walnuts.
  7. Pour the remaining cake batter on top of the fillings.
  8. Bake for 40-45 minutes, or until a toothpick comes out clean.
  9. Allow to cool before serving.

Notes

  • For extra flavor, add a splash of vanilla extract to the cream cheese mixture.
  • This cake can also be made with other fruits like blueberries or raspberries.
