  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with muffin liners.
  2. In a large bowl, mix together the flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, then gently fold in the chopped strawberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.
