  • 2 pounds baby potatoes
  • 4 slices turkey bacon
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh chives, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes and cut them in half.
  3. In a large pot, boil the potatoes until tender, about 10-15 minutes.
  4. While the potatoes are boiling, cook the turkey bacon in a skillet until crispy. Remove and crumble.
  5. Once the potatoes are cooked, drain them and return to the pot.
  6. Add heavy cream, Parmesan cheese, crumbled bacon, chives, salt, and pepper to the pot. Mix well.
  7. Transfer the mixture to a baking dish and bake for about 20 minutes, or until golden and bubbly.
  8. Serve warm as a side dish.

Notes

  • For extra flavor, add garlic powder to the potato mixture.
  • You can substitute regular bacon for turkey bacon if preferred.
