  • 2 large sweet potatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then cut them into wedges.
  3. In a large bowl, combine olive oil, minced garlic, salt, and pepper.
  4. Add the sweet potato wedges to the bowl and toss until evenly coated.
  5. Spread the wedges in a single layer on a baking sheet.
  6. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.
  7. In the last few minutes of baking, sprinkle the grated parmesan cheese over the wedges.
  8. Once done, remove from oven and garnish with fresh parsley before serving.
