- 4 large sweet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 400°F (200°C).
- Cook the sweet potatoes in a large pot of boiling water until tender, about 20-25 minutes.
- Drain and let cool slightly, then peel and mash the sweet potatoes in a large bowl.
- Add the shredded cheese, sour cream, milk, butter, garlic powder, paprika, salt, and pepper to the bowl and mix until smooth.
- Transfer the mixture to a greased baking dish and top with additional cheese if desired.
- Bake in the preheated oven for 20-30 minutes until heated through and the top is golden brown.
