Sweet potato recipes : Loaded Twice Baked Potato Casserole

A deliciously creamy and savory loaded twice baked potato casserole made with sweet potatoes.

Ingredients

  • 4 large sweet potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 4 green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup cooked bacon, crumbled

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash sweet potatoes and poke holes in them with a fork.
  3. Bake sweet potatoes for about 45 minutes or until tender.
  4. Remove from oven and let cool slightly before peeling.
  5. In a large bowl, mash the sweet potatoes with sour cream, milk, garlic powder, paprika, salt, and pepper.
  6. Fold in half of the cheddar cheese, green onions, and bacon.
  7. Transfer the mixture to a baking dish and sprinkle with remaining cheese.
  8. Bake at 350°F (175°C) for 20-25 minutes until heated through and cheese is melted.

Notes

  • This dish can be made ahead of time and refrigerated before baking.
  • Feel free to swap ingredients such as using Greek yogurt instead of sour cream for a healthier option.
