Ingredients

  • 1 cup rice
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/4 cup green onions, sliced

Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet, brown the ground beef over medium heat and drain the excess fat.
  3. Add taco seasoning and a little water. Simmer for 5-7 minutes.
  4. In a serving bowl, layer the rice, ground beef, black beans, corn, and diced tomatoes.
  5. Top with shredded cheese, avocado slices, sour cream, and green onions.
  6. Serve warm and enjoy!
