Tangy Honey Lime Chicken & Avocado Rice Stack That Delights

A delicious and refreshing recipe that combines tangy honey lime chicken with creamy avocado and fluffy rice.

Ingredients

  • 2 tablespoons honey
  • 1 lime (juiced)
  • 4 boneless chicken breasts
  • 2 avocados (diced)
  • 2 cups cooked rice
  • Salt (to taste)
  • Black pepper (to taste)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat the grill to medium heat.
  2. In a bowl, mix honey and lime juice.
  3. Marinate the chicken breasts in the honey-lime mixture for at least 30 minutes.
  4. Grill the chicken for 6-7 minutes on each side or until cooked through.
  5. While the chicken is cooking, prepare the rice and mix in diced avocados.
  6. Once the chicken is done, slice it and layer it over the avocado rice.
  7. Season with salt and pepper, and top with fresh cilantro.
