Twice Baked Breakfast Potatoes

A delightful recipe for twice baked breakfast potatoes with turkey bacon, perfect for indulgent mornings.

  • 4 medium potatoes
  • 4 slices turkey bacon
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes, then bake them for about 45 minutes.
  3. While the potatoes are baking, cook the turkey bacon until crispy.
  4. Once the potatoes are cool, cut them in half and scoop out the insides.
  5. Mix the potato insides with sour cream, shredded cheese, green onions, garlic powder, onion powder, salt, and pepper.
  6. Fill the potato skins with the mixture and top with additional cheese.
  7. Return to the oven and bake for an additional 20 minutes.
  8. Serve hot, garnished with extra green onions.
