- 4 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, diced
- 2 cups spinach
- 3 cups vegetable broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- salt to taste
- pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- Add the diced bell peppers and cherry tomatoes to the pot and sauté for 3-4 minutes.
- Stir in the pasta, vegetable broth, garlic powder, onion powder, salt, and pepper.
- Bring to a boil, then cover and reduce heat. Simmer for 10-12 minutes until pasta is tender.
- Add spinach and stir until wilted. Serve topped with turkey bacon.
