White Lasagna Soup

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chopped kale
  • 6 cups chicken broth
  • 8 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and chop.
  2. Add olive oil, onion, and garlic to the pot and sauté until fragrant.
  3. Stir in the kale and cook until wilted.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the broken lasagna noodles and cook until tender.
  6. Stir in the ricotta and mozzarella cheese until melted and creamy.
  7. Season with Italian seasoning, salt, and pepper.
